Water activity(AW) can be defined as the RH value obtained from measuring moisture-containing samples.
Relative humidity (RH) is a measure of the water vapor content of the air.
It is the amount of water vapor present in air expressed as a percentage (%RH) of the amount needed to achieve saturation at the same temperature.
As temperature increases, AW typically increases, except in some products with crystalline salt or sugar.
Water migrates from areas of high AW to areas of low AW.
