Fun & easy summer snack recipes for truck drivers

Sick of junk food or tired of the same old snacks? Change things up by prepping these seven nutritious, delicious, and easy-to-make snacks before hitting the road.

1.Strawberry Banana Quesadillas

If you’re craving something sweet without the guilt, these fruit quesadillas are just what you need. Feel free to use any tortilla you’d like — whole-grain, gluten-free, or regular white flour tortillas. You could also enjoy these quesadillas dairy-free, gluten-free, and refined sugar free. 

Other than the tortilla, you’ll need fruit jam, nut butter, one banana, and a few strawberries.

2. No Bake Fig Newton Bites

For this snack, you’ll need three cups of dried figs, one cup of walnut halves, ¼ cup of flaxseed meal, one tablespoon of pure vanilla extract, and ½ teaspoon of salt. Simply combine all ingredients in a food process, pulse until finely chopped, and use a small ice cream scoop to form balls.

3. Walking Tacos

If you’ve never heard of walking tacos, then you’re in for a treat! To make walking tacos, all you need is a snack sized bag of Fritos or Doritos (crushed), taco meat, and your favorite toppings. Simply throw the ingredients into the bag of chips and enjoy your taco on the go!

4. Hummus and Veggies

Hate veggies and don’t know how to make yourself eat ‘em every day? Then all you need is a bit of hummus. Either buy pre-made hummus, or make your own. You’ll need garbanzo beans, tahini, olive oil, cumin, lemon juice, garlic, and salt and pepper.

5. Turkey Wraps

If you’ve got a few minutes to make your own turkey wraps, you’ll need four flour tortillas, eight slices of deli turkey, four leaves of Romaine lettuce, one sliced tomato, ½ cup Ranch dressing, and eight slices of Swiss cheese.

6. Ants on a Log

If you remember making these back in elementary school, then you know how fun and easy they are to make. Simply slather on your favorite nut butter onto sticks of celery and top with your favorite dried fruit.

7. Fruit and Yogurt Cups

If you’ve got a few travel containers of mason jars with lids, then you’re halfway there. All you need is peeled and chopped fruit, plain whole milk yogurt, granola, muesli, nuts/seeds, and honey.
